March 22, 2011

Well I did some cooking on my days off. I love this weather, I was able to cookout both days. Yesterday I marinated chicken cutlets in McCormicks new South Carolina marinade. I grilled them with some grilled asparagus, and had some baked mashed potato casserole. The chicken was good. The marinade has a mustard flavor to it, perfect for chicken. I cheated on the potatoes using Bob Evans mashed potatoes. I added some sour cream, garlic, and put cheese on top. Tonight I had some brats I bought at the Second Street Market. Morgan was with me when I bought the brats. Turned out she went to school with the family that was selling them. They were pretty good. I made homemade relish, guacamole, and baked beans with wieners. Glen's been asked me to make something for him to take to work so I made oatmeal butterscotch chip cookies for us both to take in. Oh, and I made chocolate pie! Tomorrow I'm thinking taco pizza from Between the Bun's. It's no Michael's Taco Pizza from Urbana, but it's pretty good.

Wow I need to catch up already. Well the other night I made this great easy dish in the crock pot, baked ham and cornbread pineapple stuffing. I took 2 boxes of stuffing made to the "in the bird" instructions. In the water for the stuffing I used the juice from a can of crushed pineapple. I then stirred 1/2 the pineapple into the stuffing. I took a big round piece of ham steak I got at Walmart for under $3 and put it on top covering the stuffing. I covered the ham steak with the rest of the pineapple. I put it in the fridge overnight and had Glen put it on for me on low about 1:00. When I got home the house smelled wonderful. Everything cooked up perfectly. This was so easy and not at all $$$. 03172011 My First Post

Welcome to my cooking blog. I plan on sharing what I'm cooking, what I want to cook, and what I think tastes good. I'm a kinda tell it like it is, so be prepared. Hope you enjoy!

Today was beautiful. I couldn't hardly stand to stay inside. I decided to grill out tonight. I hadn't seen Glen for a few days so I wanted to fix him something nice. I grilled some delish steaks on the grill marinated in McCormick's Mesquite Seasoning, grilled whole button mushrooms in butter and sea salt, baked potatoes, grilled asparagus, and waldorf salad (like my Mom fixes with peanut butter in with the mayo). Grilling out is something I'm getting better at. I would like to get a smoker this summer and try my hand at that. Some things I grill come out great, some come out like crap. McCormick's Mesquite Seasoning is the bomb! It makes everything delish. I have 2 more new seasonings I'm anxious to try. Got some fish, and chicken in the freezer volunteering themselves. I love being able to grill out, saves on dirty dishes! Well off here for the night, puppy time.
